A Comfort Meal Perfect For Camping
When looking for quick & easy recipes for camping, slow cooker meals are always on my list. This is my favorite way to prepare dinner on a busy adventure day. I love the ease of dumping a few ingredients into the pot in the morning. Coming back to a hot meal waiting & ready for us to dig in is the perfect ending to any day!
This simple meal makes a hearty dinner for a cool night at the campground. This Slow Cooker Sausage and Potato Casserole comes together quickly and has all the gooey, cheesy goodness you’d expect in a comfort meal.
This Slow Cooker Sausage and Potato Casserole would also be great for lunch, or even breakfast with scrambled eggs & toast.

How To: Slow Cooker Sausage and Potato Casserole
Jump to RecipeCombine potatoes (frozen or fresh), diced onion (dry or fresh), sausage & 2 cups of cheese in your greased slow cooker.
Add cream of chicken, sour cream, salt and pepper & mix together.
Sprinkle remaining cheese on top.
Cook on low for 6-8 hours or high for 4-5 hours. The dish is done with your potatoes are soft and your onions are cooked through. Careful not to overcook your potatoes!
This Slow Cooker Potato and Sausage Casserole was a huge hit with our family, even our picky little one loved it! I can’t wait to take this recipe with us on our next camping trip.
A Few Tips
- If using fresh potatoes, you may want to up your cooking time a bit to ensure they cook through.
- When meal prepping before your trip, assemble the entire recipe & freeze in a gallon size bag. Then dump the bag into your slow cooker in the morning at the campground. Zero prep on the road!
- Try out new recipes at home before you leave on your trip. This way you can ensure it turns out okay, and everyone in your family enjoys it! (In this blog, I created this meal at home to make sure we liked it!)
- If cooking this at home in your oven as a casserole, prepare the same. Cover the dish with foil & cook at 350* for 40minutes or until cheese is melted & potatoes are cooked through.

Slow Cooker Potato And Sausage Casserole
Ingredients
- 32 oz bag of hash browns
- 14 oz kielbasa – diced
- 1 small onion, diced
- 2 1/2 cups shredded cheese of choice
- 10.5oz can cream of chicken soup
- 1/2 cup sour cream
- salt & pepper
Instructions
- Combine all ingredients in a greased slow cooker, save 1/2 cup shredded cheese.
- Sprinkle remaining cheese over top.
- Cook on low 6-8 hours or high 4-5 hours. Meal is done with potatoes are soft & cheese is melted. Enjoy!
